- 1 cup almonds chopped, slivered, or sliced
- 1/2 cup pistachios chopped
- 1/2 cup pumpkin seeds (pepitas) hulled
- 2 tbsp chia seeds
- 2 tbsp basil seeds or sub another seed
- 2 tbsp sesame seeds white, black or both
- 2 tbsp flax seed milled
- 2 tbsp hemp seed optional
Binding Ingredients
- 1 egg white large
- 1/4 cup olive oil extra virgin
- 1 tbsp maple syrup pure
Seasoning
- 1 tsp thyme
- 1 tsp sea salt reduce or omit if using salted nuts
- 1/2 tsp garlic powder or granulated
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1/8 tsp cayenne pepper optional
Instructions
- Preheat oven to 325℉. Whisk together base ingredients: 1 egg white, 1/4 c. olive oil, 1 tbsp maple syrup
- Pour nuts and seeds into base along with seasoning and stir. 1 c. almonds, 1/2 c pumpkin seeds, 2 tbsp each seed: basil, chia, sesame, flax, hemp. 1 tsp salt, 1 tsp thyme, 1/2 tsp each: chili powder, paprika, garlic powder. 1/4 tsp cumin, 1/8 tsp cayenne (optional).
- Scoop out onto baking sheet and spread out into an even layer. Bake 15 minutes, stir. Bake an additional 10-15 minutes.
- Granola should be slightly toasted when done. Let cool completely before placing in glass jars for storage. Enjoy for up to a week.
