  • 1/4 cup coconut oil, melted or avocado, olive oil
  • 1/3 cup pure maple syrup
  • 1 tsp pure vanilla
  • 1.5 tsp cinnamon
  • 1/4 tap salt

Nuts & Seeds

  • 2 cups almonds chopped, slivered, or sliced
  • 1/2 cup pecans chopped
  • 1/2 cup walnuts chopped
  • 1/2 cup coconut unsweetened
  • 1/3 cup pumpkin seeds no shell
  • 3 tbsp chia seeds
  • 3 tbsp basil seeds see note
  • 2 tbsp flax seed milled

Instructions
 

  • Preheat oven to 325℉. In large bowl, whisk together melted coconut oil (1/4 cup), maple syrup (1/3 cup), vanilla (1 tsp), cinnamon (1.5 tsp), & salt (1/4 tsp).
  • Pour in all nuts (3.5 cups total) and seeds (1/3 c pumpkin, 1/2 cup total chia, flax, basil seeds). Stir to coat. Spoon out onto baking sheet. Spread out evenly.
  • Bake for 10 minutes at 325℉. Stir and bake another 10 minutes until lightly toasted. Once cooled, enjoy as snack, on top of fruit, in a parfait or on a salad.
