In Brunch, Snacks by sarawalkenbachLeave a Comment

If you’re looking for a breakfast or snack that’s as beautiful as it is nourishing, this Creamy High Protein Greek Yogurt Chia Pudding is for you. Fresh berries, creamy Greek yogurt, vanilla, and natural sweetener are blended together then chia seeds are stirred in for a high protein chia pudding that’s naturally vibrant in color. After a quick chill in the refrigerator, you’ll have a delicious make-ahead treat that’s perfect for busy mornings, afternoon snacks, or even a healthy dessert.

I first came across this chia pudding idea while watching a Reel from Melissa Ben-Ishay of Baked by Melissa, and I was immediately sold. It was unlike any chia pudding recipe I’d seen before. I love that this recipe is incredibly forgiving, you don’t have to measure every ingredient perfectly. Add a little more fruit for sweetness or a drizzle of honey or maple syrup to suit your taste. It’s one of those recipes that’s easy to make your own.

This chia pudding is SO good with granola. For an easy grain-free version try my Maple Cinnamon Granola.

Ingredients

Plain Greek Yogurt

Plain Greek yogurt is a nutritional powerhouse that’s rich in protein, making it a satisfying choice for breakfast or a snack. It’s also a good source of calcium to support strong bones and teeth, while containing probiotics that can help promote a healthy gut. Choosing plain Greek yogurt lets you enjoy all of these benefits without the added sugars often found in flavored varieties.

Fresh (or Frozen) Berries

One of my favorite things about this recipe is how versatile it is. Use whatever berries you love most or happen to have in the fridge or freezer. Fresh or frozen strawberries, blueberries, raspberries, blackberries—or a mix of them all—will create a delicious, naturally sweet pudding. Berries are packed with antioxidants, fiber, and vitamin C, making this recipe as nourishing as it is beautiful.

Natural Sweetener of Choice

Sweeten this Greek yogurt chia pudding to your taste! I love using pure maple syrup or honey for their natural sweetness, but monk fruit drops are a great option if you’re looking to reduce added sugar. Start with a small amount, give it a taste, and adjust as needed. Since the sweetness of your berries can vary, this recipe is easy to customize until it’s just right.

Chia Seeds

Don’t let their tiny size fool you—chia seeds are packed with nutrition! They’re an excellent source of fiber, which helps support digestion and keeps you feeling full longer. Chia seeds also provide plant-based omega-3 fatty acids, antioxidants, and minerals like calcium and magnesium. When mixed with liquid, they absorb moisture and create the thick, creamy texture that makes this pudding so satisfying.

Flavor

This recipe is the perfect blank canvas for your favorite flavors. Keep it simple with one of these easy additions or get creative and make it your own. See below for some of my favorite flavor variations—cinnamon is a great addition, too.

Pure Vanilla Extract – adds warmth and sweetness

Pinch of Salt – brings out the sweetness
