Curry Chicken Salad Ingredients

Curry chicken salad without celery recipe ingredients are chicken, carrot, golden raisins, greek yogurt, honey, cilantro, cashews, a squeeze of lemon, curry powder, garlic, ginger, and a pinch of salt.
You won’t miss the celery in this full of flavor curry chicken salad.

Greek Yogurt

By swapping out the mayo you add protein and decrease fat and calories typically found in chicken salad. According to Healthline, Greek yogurt is a rich source of protein, calcium, and probiotics.

“They (probiotics) aid digestive health by balancing your gut microbiome — the friendly bacteria in your digestive system — which may reduce your risk of inflammation and various illnesses,”

Ariane Lang, BSc, MBA, Healthline.com

Greek yogurt also contains less lactose than regular yogurt, making it an excellent choice for people who are lactose intolerant.

Chicken

As a lean meat, chicken is an excellent source of high-quality protein that promotes muscle growth and repair. Use rotisserie chicken, grilled chicken, or boiled chicken. Any of it works in this recipe.

Curry Powder

Curry powder is the key flavoring ingredient in this recipe. Not all curry powder is created equal. Typically, yellow curry powder contains turmeric, coriander, cumin, and fenugreek. Sometimes you’ll find ginger and chili pepper in there too. Besides being full of flavor, it also offers several health benefits:

  • Anti-inflammatory properties
  • Contains Antioxidants
  • Antifungal and antibacterial properties

This salad is perfect on the go, at a picnic, or as a snack on crackers.

Cashews

These rich nuts provide the crunch. Since omitting the celery, this salad needs a crunch to balance the creaminess. Cashews are full of protein, healthy fats, and fiber.

Carrots

Carrots not only help your eyeballs, but they are also a powerful antioxidant. Loaded with B vitamins, vitamin K, and potassium you can’t go wrong adding more carrots in your diet.

In this recipe they add natural sweetness and a bit of crunch.

Golden Raisins & Honey

These ingredients bring the sweetness to the Curry Chicken Salad without adding refined sugar.

Cilantro, Garlic, & Lemon Juice

Cilantro adds a pop of color, sweetness, and distinct flavor that really round this chicken salad out. If you are one of the 4-14% of the population that thinks cilantro tastes like soap, just omit it.

Garlic is always good in curry. Use garlic granules so it’s not so harsh.

Lemon juice adds a bit of brightness. Fresh is always best.

How to Make Curry Chicken Salad

This is pretty much a dump and stir together type of recipe. Which is the best! Here’s how:

  1. Whisk together Greek Yogurt and spices.
  2. Add in everything else and stir.
  3. Place in butter lettuce, dip with a cracker, or eat plain.

This will take you 10 minutes tops to throw together.

Substitutions

Healthy Curry Chicken Salad without Celery is delicious as is, but if you would like to make some substitutions, please do.

Don’t like cashews, go for peanuts (or sunflower seeds, for a nut free option).

Not a cilantro fan, just omit.

If you don’t like raisins, use grapes or apples instead.

Can I use any kind of chicken?

Yes. Rotisserie chicken is easy, and it always turns out perfect. Grilled chicken will give the salad a smokiness, which is nice. Just make sure you are using cooked chicken.

Is curry powder spicy?

It depends on the brand. Look at the ingredient list to see if the manufacturer has added cayenne pepper. This will of course mean that it’s spicy.

Can I use ground ginger instead of fresh?

Yes. I always have a knob of ginger in my freezer. But, if you don’t, ground ginger will work just fine. You’ll only need a 1/2 teaspoon.

Chicken salad is a staple of summertime picnics and lunchtime menus, but traditional recipes can be high in fat and calories. This recipe swaps out mayonnaise with Greek Yogurt. It's every bit as tasty and rich with curry flavor.
