Easy Healthy Chicken Artichoke Recipe in 35 Minutes

Full of flavor and nutrition! Briny olives and feta make this dish sing. Chicken with artichoke hearts, olives, cherry tomatoes, mushrooms, and feta will be your new nightly go to.
Preheat oven to 400°F. Place chicken in pan and sprinkle with some salt, pepper, and oregano. Grate garlic over chicken and rub in.
In the pan add artichoke hearts, 1 cup cherry tomatoes, 1 cup olives, 1 cup mushrooms, and 1/2 cup feta. Drizzle with 2 tbs olive oil, sprinkle with salt, pepper, and oregano.
Bake for 30 minutes or until chicken breast registers at 165°F in the thickest part (170°F for thighs).
Remove from oven, let rest for 5-10 minutes. Serve with pasta, quinoa, rice, broccoli, or spinach.
