Easy Healthy Chicken Artichoke Recipe in 35 Minutes

Ingredients
  

  • 4 Chicken Breasts or Thighs boneless & skinless
  • 1 can Artichoke Hearts in water (drained)
  • 1 cup Cherry Tomatoes
  • 1 cup Olives Castelvetrano or your favorite
  • 1 cup Mushrooms, sliced optional
  • 1/2 cup Feta crumbled
  • 2 cloves Garlic grated with microplaner or minced
  • 2 tbsp Olive Oil extra virgin
  • 1/2 tsp Salt
  • 1/2 tsp Pepper fresh;y ground
  • 1/2 tsp Oregano dried

Instructions
 

  • Preheat oven to 400°F. Place chicken in pan and sprinkle with some salt, pepper, and oregano. Grate garlic over chicken and rub in.
  • In the pan add artichoke hearts, 1 cup cherry tomatoes, 1 cup olives, 1 cup mushrooms, and 1/2 cup feta. Drizzle with 2 tbs olive oil, sprinkle with salt, pepper, and oregano.
  • Bake for 30 minutes or until chicken breast registers at 165°F in the thickest part (170°F for thighs).
  • Remove from oven, let rest for 5-10 minutes. Serve with pasta, quinoa, rice, broccoli, or spinach.
