Preheat oven to 350 degrees F. In a glass bowl, melt chocolate (3/4 cup) and oil (1/3 cup) until smooth. This can be done in the microwave in 30 second increments, or in a double boiler. In the microwave it shouldn’t take much more than a minute.
Whisk in eggs (2), until combined. Add in maple syrup (1/2 cup) and vanilla (2 tsp). Whisk until combined.
Stir in flour (1/3 cup), cocoa powder (1/4 cup), and salt (1/2 tsp) until just combined. Spray pan coat on a mini muffin pan OR an 8×8 pan. I like to use a small cookie scoop, if using mini muffin pans. Or pour into 8×8 pan. If using sprinkles, top with sprinkles. Bake for 8-10 minutes for mini muffins, and 12-15 minutes for 8×8 pan. Don’t over bake!
